Pan Roasted Salmon
 
Ingredients
 

Hash
1 ea Yukon Potato ( Small dice, blanched), 1 ea Carrot (Small dice, blanched), 6 ea Shiitake Mushroom Caps (quartered), 1 cup Baby Spinach

White Wine Butter Sauce
1 ea. Shallot (chopped) 1 tbs. Thyme (chopped), ½ cup Champagne Vinegar, ½ cup White Wine , 1 Butter (cubed)

Salmon Tornado
2 - 6 oz Salmon Filets, strait cut and butter flied rolled and secured with bamboo skewer’s

  Directions
 

Hash
Sauté mushrooms in oil Add potatoes and carrots, brown slightly Add spinach and wilt
.

White Wine Butter Sauce
Reduce shallots, thyme, vinegar and wine to sec Slowly whisk in butter Strain and hold warm.

Salmon Tornado
To assemble place hash in middle of plate Place Salmon on top of hash Pool sauce around fish Garnish plate with basil oil, beet oil, mache and fried leeks.
