Sauté mushrooms in oil Add potatoes and carrots,
brown slightly Add spinach and wilt.

Wine Butter Sauce
Reduce
shallots, thyme, vinegar and wine to sec Slowly whisk in butter Strain
and hold warm.
Salmon
Tornado
To assemble place hash in middle of plate
Place Salmon on top of hash Pool sauce around fish Garnish plate
with basil oil, beet oil, mache and fried leeks.
