Shrimp and Lobster Caribbean
 
Ingredients
 

½ lb Jumbo Shrimp (fully pepped/deveined)
1 cup all purpose flour
1 tbsp granulated sugar
2 tbsp Vegetable Oil
2 tbsp Ketchup
2 oz. Pineapple Juice
2 cups prepared Hot Rice
2 Lobster Tails (no shell/split)
2 tbsp Jamaican Jerk Seasoning
1 tsp Ground Ginger
2 tbsp Peanut Butter (creamy)
1 tsp Kikkoman Teriyaki Sauce
1 Scallion (diced)
5 Macadamia Nuts (crushed)



  Directions
 

1. In small bowl combine flour, jerk seasoning, sugar and ginger… mix well then set side.

2. In small bowl combine peanut butter, ketchup, soy sauce, scallions and pineapple juice… whisk well then set aside

3. Add shrimp and lobster meat to flour mixture and coat all.

4. Over high heat, allow large sauté pan to get very hot… add oil.

5. Add shrimp and lobster meat to pan, searing on all sides… keep turning until fully cooked.

6. Add prepared rice to serving plate, top with seared shrimp and lobster meat, drizzle with peanut sauce, then sprinkle with crushed macadamia nuts.

   Serves 2
