Chop
snow crab, red peppers and green peppers. Sauté diced red and green peppers in butter. Add sauté peppers
to remaining ingredients (except for sole), mix thoroughly. Stuff sole
and place on a sheet pan. Add white wine and a little water (to keep
sole from sticking to pan), and clear butter. Place in 375° oven
for 5 to 7 minutes. Top finished product with a Dijon mustard/hollandaise
blend.
