Hand
flatten or use mallet tenderizer until the breast takes on the appearance
of a cutlet, being sure to leave the skin on, thereby preserving the
moisture in the meat during the cooking process. Dip the breast in
a Wash consisting of fresh egg and milk, enough to saturate breast.
Thoroughly coat both the inside and outside of chicken breasts with
seasoned breading.
Cooking
Process Preheat a sauté pan with either
butter, butter and olive oil combination, or straight olive oil. The
breast should turn a golden brown after sautéing both sides on a medium
flame. In the meantime, for each breast, prepare three ounces of sliced
apples and juice, one ounce of raisins and a tablespoon of finely diced
walnuts blended together and baked until hot. Spoon the mix across
the top of the breast. Top with Hollandaise sauce which may be purchased
from gourmet sections of major grocery stores.
