Orzo with Spinach
 
Ingredients
 

olive oil
2 cloves garlic, minced
4 cups chicken (or veg) stock
2 cups uncooked orzo
1 10 oz package, frozen spinach, thawed, with the water squeezed out
1/2 cup grated parmesan
1 teaspoon dried basil
salt and pepper to taste

  Directions
 

Over a medium heat, sauté garlic in olive oil for 30 seconds.  Stir in
broth, orzo, and spinach.  Bring to boil, and simmer 12-15 min, or
until broth is absorbed and the orzo is cooked to your liking.

Sir in remaining ingredients, and let it sit for 5 minutes.

   Serves 6
